Pesto--- is easy, it just isn't that cheap. Pine nuts are the killer, but you can substitute hazelnuts or even walnuts for a cheaper and more available option!
1/4 cup pine nuts
1/4 cup Parmesan
1/4 cup olive oil
splash of water
1 tbsp lemon juice
2 cups packed basil
3 cloves garlic
salt to taste
pepper to taste
Using a blender or food processor, finely chop and blend all ingredients into a paste! (If you do garlic, cheese, and nuts first, then the others it turns out pretty smooth). Put on toasted bread for bruschetta, on pizza, or as a pasta sauce!
